Today, I'm sharing a grilled pepper salad that is fantastic for weight loss as it's filling and aids digestion.

During my stay in Mysore, I discovered the magic of grilled peppers. On a lazy Sunday afternoon, my host at Anokhi Garden grilled some red peppers, filling the house with an intoxicating aroma. This experience inspired me to explore peppers as a key ingredient in my diet.

Health Benefits of Consuming Peppers:

  1. Rich in Vitamins and Antioxidants: Peppers are an excellent source of vitamins A and C, which are powerful antioxidants that help protect your cells from damage.

  2. Boosts Metabolism: The capsaicin in peppers can help boost your metabolism, aiding in weight loss.

  3. Improves Digestion: Peppers are high in fiber, which promotes healthy digestion and prevents constipation.

  4. Supports Eye Health: The high vitamin A content in peppers supports good vision and eye health.

  5. Anti-Inflammatory Properties: Peppers contain anti-inflammatory compounds that can help reduce inflammation in the body.

Here's a simple recipe for Grilled Pepper Salad:

Ingredients:

  • Peppers

  • Minced garlic

  • Olive oil

  • Balsamic vinegar or lemon

  • Parsley or any herb

  • Salt to taste

  • Parmesan cheese (optional)

Instructions:

  1. Preheat your oven to approximately 200°C.

  2. Place the peppers in the oven and let them smoke for around 10 minutes until they are charred but not burnt.

  3. Once they cool down, peel the skins off the peppers.

  4. Remove the seeds and stalks, then chop the peppers.

  5. Add minced garlic, a dash of lemon or balsamic vinegar, olive oil, parsley, seasoning, and a hint of Parmesan cheese.

  6. Mix well and enjoy! You can eat it straight or pair it with whole wheat bread or pasta.
