Can I Make 4 Ingredient Pumpkin Soup for Fussy Eaters?

Hi there... Yes, only four ingredients! Well, if you don't count the herb which I added for the grown-up version, but the soup tastes fabulous even without it. For that matter, I am all for using fewer ingredients when it comes to healthy cooking. Too many flavors in the food don't just confuse the palate but also affect digestion to a great extent.

So, pick out the star ingredient for your recipe and select others to complement it, not compete with it. In this case, the star is obviously pumpkin!

I have been blessed with a kid who has a wide spectrum of acceptance when it comes to food. That's one of the big reasons he's a delight to travel with. He's just seven and has tried mostly all the Indian cuisines he's been offered along with Vietnamese, Korean, Chinese, Italian, Singaporean, Thai, and Sushi (though that wasn't his favorite, but the idea is that he tried it out).


Anyways, that aside, I do know of a lot of kids (and adults!) who would cringe at the name of pumpkin soup and are fussy eaters. Here's why I favor it: it is one of the most fantastic vegetables that has a fruity quality to it. As the pumpkin ages, it imbibes a sweeter flavor in its flesh which goes extremely well in savory versions. Secondly, unlike traditional soup recipes, this one doesn't need to be strained. This means it retains all the fiber of the vegetables, making this soup a wholesome delight.

I had experimented with this soup earlier with different thickening agents like cream, milk, corn flour, etc., but all seemed very unhealthy options for my delicate tummy. So one of my friends suggested oats, and that's what we'll use here. You'll be surprised how well it works!

So, all we need is:

  • Pumpkin

  • Carrots

  • Oats

  • Garlic

Clean and chop the ingredients, then place them in a pressure cooker with some seasoning. Cook for a couple of whistles, then blend until smooth. Reheat and serve. You can add herbs at this stage. I have added dry parsley, but fresh can be a good option too. If you are not too keen on the health part, you can lightly sauté the vegetables before cooking them. I do hope you'll try it out and enjoy it as much as I do.
